
Sometimes I will get up late because of my busy baby who plays till midnight. I will feel it tough to make anything which requires grinding or roasting steps. Anyways I need to pack lunch for my husband. For that I have some quick recipes handy. Kovakkai Kuzhambu is one such recipe and it goes very well with brown rice. I have told you many times that not every side dish go well with brown rice. So we need to find some interesting and spicy dishes to combine with brown rice. As most of my viewers just refer this blog for weight loss recipes, I am posting more side dishes that go well with brown rice. Make a note of this one. This is quick recipe to make and very tasty with brown rice. Kovakkai or Tindora has some traces of calcium and more fibre.

Quick Kovakkai Kuzhambu | Quick Tindora Kuzhambu

Ingredients
Kovakkai - 10 to 15
Finely Chopped Tomatoes - 2 tablespoons
Sambhar Powder - 2 Teaspoons
Tamarind - a gooseberry sized
mustard seeds, fenugreek, curry leaves - for tempuring
Salt and Gingelly Oil - as per taste

Quick Procedure
1. Cut tindoras lengthwise into thick julians. Make tamarind juice from tamarind.
2. Heat a pan. Add little oil.
3. Add mustard seeds, fenugreek and curry leaves. Let them sputter.
4. Add tindora or kovakkai and saute for a while.
5. Add tomatoes and saute till. Cook the pan covered till tomatoes become mushy.
6. Add sambar powder and salt. Saute till the raw smell goes off.
7. Add tamarind juice and cover the pan.
8. Cook it covered in simmer for 5 to 10 minutes.
9. Thats all the quick kuzhambu is ready. You may add a teaspoon of gingelly oil to enhance the flavour.
