For weight loss, breakfast should be light and easy to make. When I think that, only porridges come to my mind. They are easy to make and make us feel light. This ragi porridge is nothing complex to make. The recipe I am following for samai and ragi porridge is what I copied from our Kanji Kadai Patti (Granny). She is a small scale shop owner in Nanmangalam, Chennai. In her shop, you have snacks and some groceries. In addition to these, she puts some seasonal items for sale. For example, porridges in summer mornings, vada curry or sambar in evenings, panakam and neer mor in afternoon and some crispy fried paruppu vadai in winter evenings. Her shop happened to be a neat and tidy one. So me and my husband just grab a lotta (sombu) full of porridge and finish our breakfast there itself.

One day I asked her what is the secret of the taste. She gave the credits to her tempering or thalippu. I was able to identify the fine elements in the tempering and tried to replicate. It came up well and I am sharing it with you. This Salted Ragi Porridge is an awesome breakfast in summer.

Ingredients

  • 1/4 cup Ragi Flour (Finger Millet Flour)
  • 1/2 cup Curd
  • little salt

To Saute

  • 1 tsp Gingelly Oil
  • 1/4 tsp Cumin Powder (Seeraka Podi)
  • a pinch of Hing (Perungaya Podi)
  • 4 Shallots Chopped
  • 1 Green Chilli
  • ver little Curry Leaves (Optional)

Instructions

  1. Mix ragi flour and half cup of water.  Boil water in a saucepan. Add the ragi mixed with water to this boiling water.

  2. Reduce the flame to medium and stir often. It will get thicker, while getting cooked. In next 5 minutes, it will get cooked. Remove from stove and let it cool down.

  3. Heat gingelly oil a pan and add cumin powder and hing(perungayam). Switch off the flame and then add chilli, shallots and curry leaves. Saute once or twice.

  4. Add the sauted items and curd to cooked and cooled Ragi Kanji. Sprinkle some salt and mix well. Ragi Porridge is ready to serve now.
