I have already told several times that sorakkai will be useful for weight loss. It dissolves the excess fat in our body. Especially the stomach area. You would have heard in most of the health related shows too. I wanted to post a sambar recipe with sorakkai. I tried the regular sambar recipe many times. But I feel the taste is really good if it is made in Tirunelveli Vellai Sambar style. Those who are from nellai background will definitely know about the vellai sambar. It is the sambar recipe followed there. Drumstick and white brinjal are the main ingredients in that sambar. It is the regular sambar we make. Only on rare occasions we make sambar with sambar powder. I recall my friends kidding me like "your sambar tastes like paruppu kuzhambu". But people from our region will never forget the taste. My mom makes vellai sambar often and sambar powder sambar occasionally. After my college days I got used to all kind of sambars followed in different regions. Out of them, Tanjore sambar is my favorite.

Back to the recipe. This sambar is not much spicy and all. it will be really good in taste and has only sorakkai as the vegetable. I hope you would like this recipe.

Sorakkai Sambar | Tirunelveli Vellai Sambar Style

Ingredients
  • Sorakkai - 1/2 medium sized, chopped
  • Toor Dhal - 2/3 cup
  • Asafoetida and Turmeric Powder 1/4 teaspoon
  • Tamarind - a small gooseberry size, soaked and juice extracted
  • chilli powder - 1/2 to 3/4 teaspoon
  • Salt and Oil - as per taste
  • 1 sliced shallot, little mustard seeds and curry leaves for tempering
coarsely grind
  • grated coconut - 1/4 cup
  • cumin seeds - 1/4 teaspoon
  • shallot - 1

Quick Procedure
  • Wash and clean toor dhal. Add water, asafoetida and turmeric powder. Pressure cook it for 2 or 3 whistles.
  • Boil water. Add chopped sorakkai or bottle gourd. Cover and cook it till it becomes soft.
  • Grind grated coconut, shallots and cumin seeds, coarsely.
  • Add this paste and chilli powder to cooked sorakkai.
  • Add cooked dhal and extracted tamarind juice.
  • Heat a pan. Add oil. Add mustard seeds and sliced shallots. Saute till it turn golden brown. Add curry leaves. This is the thalippu or tempering.
  • Add this tempering to sambar and let it boil once.
  • Sambar is ready. Cover the vessel and let it rest for some time. After a few minutes, serve it with hot steaming rice.

Add cooked dhal, salt and extracted tamarind juice. Remember you should add salt only at this step. If you add it at the time of cooking soraikkai, the vegetable will absorb all salt and will taste horrible.

Heat a pan. Add oil. Add mustard seeds and sliced shallots. Saute till it turn golden brown. Add curry leaves. This is the thalippu or tempering. Add this tempering to sambar and let it boil once

Sambar is ready. Cover the vessel and let it rest for some time. After a few minutes, serve it with hot steaming rice
