Always we wish to include something healthy in our food diet. Curd rice contributes more in comforting us. Curd has more probiotics. It helps in digestion. It helps in healing our intestine and stomach. I love curd rice, the way my mom makes. But I got used to this fruity curd rice in office potlucks. Also in parties, the caterers make this type of curd rice. After following a weight loss diet, I used to have this curd rice once in a week. I would add pomegranate and little grapes. This made me a feeling that I had rice as well as a dessert. I started loving the mild sweetness. So the recipe of fruity curd rice in this post.

Ingredients
Quick Procedure
- 2 cups of Cooked Rice, cooled to warm temperature
- 1 cup of thick curd
- 1/2 cup of cooled milk
- Pomogranate - little
- Grated Carrot - 1 tablespoon
- finely chopped coriander leaves - little
- gingelly oil - 1 tablespoon
- mustard seeds - 1/4 teaspoon
- ginger - 1/4 teaspoon, minced
- green chillies - 1, minced
- curry leaves - little
- asafoetida - a pinch
- salt - as per taste
Quick Procedure
- Cook rice very soft and mushy. Let it cool down form hot to warm.
- Heat a pan. Add gingelly oil.
- Add mustard seeds. Let it sputter.
- Add ginger, chillies and curry leaves. Saute and switch off the flame.
- Add asafoetida. Add 1/4 cup of water.
- Add curd, milk and tempering to the rice.
- Add little salt too.
- Add pomogranate, carrot and coriander leaves
- Mix well and let it settle for few minutes.
