In my home we use kerala matta rice often. For fish kuzhambu, theeyal, puli kuzhambu and kerala sambar, kerala rice tastes better. But it takes a lot of time to get cooked. If we cook it in open pot, the time taken will be really more. But cooking using pressure cooker is the best option. But restricting it with limited water, is not good. So cooking it in pressure cooker with more water and straining it will work well. This is the method my mom uses. If you follow tis method, you will feel it very simple and easy.

There are many health benefits in red rice. I will list it out. It is rich in vitamin B6 and antioxidants. It makes us feel refreshed and activates muscles. We can be active and more fresh. It is rich in fiber. It keeps us feel full. Thereby helps in controlling obesity. Yes, it helps in weight loss too. If you are on weight loss diet, you can definitely use this red rice often. Ingredients
  • 1 cup Red Rice or Matta Arisi
  • 4 cups of water

Quick Procedure
  • Take one cup of red rice in a vessel. Wash it in water and drain it.
  • Add 4 cups of water and we are going to pressure cook it. Pressure cook it for 3 to 4 whistles. I mean 2 whistles more than white rice
  • When the pressure subsides, open the lid. The rice is cooked. We need to strain the extra water and the strained rice is ready to serve with any kuzhambu of your choice.

  1. You have not mentioned soaking it before for 30 ms or 1 hour for making it softer. Also, is it always 1:4 cups ratio of rice to water proportion? Can I add little coconut oil to make it softer before cooking? Thanks.

    1. yeah, I forgot to mention about soaking.. For straining method, 1:4 cups ratio is enough. For simply pressure cooking the ratio is 1:3.5 ,,, Thanks for the comment..
