Avocado ice cream recipe

Ice creams are my favorite. But they are rich in fats and sugars. As I have PCOS, I must skip sugars and bad fats. They are not good for losing weight with PCOS. So I thought it is better to make low fat ice creams at home. I started finding out recipes of ice creams low in fat or ice creams with some good fat. This Avocado and Mint ice cream is first among them. I referred this recipe in eatingbirdfood and modified as per my taste.

Avocado ice cream recipe

As the flavor of avocado is a bit blunt, I used mint to enrich the flavor. For enhancing taste, I have added lemon juice. Just for making it tastier, I am adding very little sugar. This ice cream can be made without ice cream maker.

If you see the texture of this ice cream, it will be very very creamy. The texture is similar to regular ice creams. After lunch or dinner, you can have this dessert. It is a guiltless dessert.

Avocado mint ice cream

To make it as a diabetic friendly dessert, skip sugar or reduce it to half. If you would like to see some other low fat dessert or diabetic friendly dessert, refer these Strawberry Sorbet, Apple Sandwich and Strawberry Frozen Yogurt.

Ingredients
  • 3 small avocados
  • 2 tsp sugar
  • A handful of mint leaves
  • 1 tsp lemon juice

Quick Procedure
  • Avocado skin should be black. Then it had ripen. Use that kind of avocado.
  • Cut avocado into halves. Scrap avocado flesh with a spoon. Collect it in an airtight container. Close and freeze it for 4 hours.
  • Take mint leaves, sugar and frozen avocados in a mixer jar. Add 1/8 cup of water and grind it. With repeated grinding, you will get a smooth paste.
  • Finally, add lemon juice and grind it. Collect this cold smooth paste in an airtight container.
  • Keep it in a freezer for 4 hours. The ice cream is ready.
  • At time of serving, take it out and scoop out with a warm spoon. Serve it in a bowl.

Keep it in a freezer for 4 hours. The ice cream is ready.

Strawberry frozen yogurt recipe

Strawberry Frozen Yogurt is really very popular here in US. It is served as one of the low fat desserts. It doesn’t have any added preservatives and so good for health. This strawberry froyo is my kid’s favorite.

As it is a skinny Dessert, I wished trying at home. You can straightaway find the recipe in any food website. I referred this in SuperHealthyKids. To make it creamy, they include banana. This gives you the same texture of ice creams and thus becomes a guiltless dessert or snack. To make it diabetic friendly, skip the honey.


Strawberry frozen yogurt recipe

If you find berries cheap at your location, you can buy and freeze them in ziplock cover until 3 months. You can use it when you wish to make this kind of skinny dessert. Bananas are available in all seasons. Honey and Curd are common ingredients at home. There is no need for churning or ice cream makers. So it is easy to make this dessert.

Ingredients
  • 1 cup chopped strawberries, frozen
  • 1/2 banana, frozen
  • 1 tsp Honey
  • 2 tsp thick curd

Quick Procedure
  • Take the frozen berries, banana, honey and curd in a mixer jar
  • Grind it well and purée it
  • Transfer it to an airtight container and add some chopped strawberries. Keep it in freezer for 4 hours
  • You can take it out during serving time. Scoop it out with a warm spoon and serve it in a bowl

I like puttu very much. My mom makes it often. She alternatively makes Red Rice and White Rice Puttu. I love the taste of Red Rice Puttu more. The main reason is, it will not be dry. I used Nirapara (store-bought) puttu podi to make this puttu. That puttu maavu is in correct consistency. (grainy)

I don't have puttu maker and so used idli plate and steamer. If you have puttu maker, use that. You can refer how to cook red rice ? Recipe Here.

For making Puttu
  • 1 cup Chemba Puttu Podi
  • 1/3 cup water
  • 1/3 cup grated coconut
  • salt to taste
Side Dish
  • banana
  • small piece of jaggery

Quick Procedure
  • Take a cup of Red Rice Puttu Maavu in a mixing bowl. Take 1/3 cup of water and add little salt to it.
  • Add water little by little and start mixing with hands. If it is too dry, add little more water and mix. Mixing is done. Let it rest for 10 to 15 minutes.
  • Take an idli plate. Fill idli plate with some grated coconut. Next, fill it with the puttu podi and finally sprinkle some grated coconut at the top.Place this idli plate in a steamer. Cook it in steam for nearly 10 minutes or a heavy steam comes out of the steamer.Puttu is ready.
  • A tooth twig inserted should come out clean. That ensures that the puttu is cooked well. Serve with little jaggery and small banana

Take a cup of Red Rice Puttu Maavu in a mixing bowl


Take 1/3 cup of water and add little salt to it.


Add water little by little and start mixing with hands. If it is too dry, add little more water and mix.


Mixing is done. Let it rest for 10 to 15 minutes.


Fill idli plate with some grated coconut.


Next, fill it with the puttu podi and finally sprinkle some grated coconut at the top.


Place this idli plate in a steamer. Cook it in steam for nearly 10 minutes or a heavy steam comes out of the steamer.


Puttu is ready. A tooth twig inserted should come out clean. That ensures that the puttu is cooked well.

Serve with a little jaggery and small banana
