
Ice creams are my favorite. But they are rich in fats and sugars. As I have PCOS, I must skip sugars and bad fats. They are not good for losing weight with PCOS. So I thought it is better to make low fat ice creams at home. I started finding out recipes of ice creams low in fat or ice creams with some good fat. This Avocado and Mint ice cream is first among them. I referred this recipe in eatingbirdfood and modified as per my taste.
As the flavor of avocado is a bit blunt, I used mint to enrich the flavor. For enhancing taste, I have added lemon juice. Just for making it tastier, I am adding very little sugar. This ice cream can be made without ice cream maker.
If you see the texture of this ice cream, it will be very very creamy. The texture is similar to regular ice creams. After lunch or dinner, you can have this dessert. It is a guiltless dessert.

- 3 small avocados
- 2 tsp sugar
- A handful of mint leaves
- 1 tsp lemon juice

- Avocado skin should be black. Then it had ripen. Use that kind of avocado.
- Cut avocado into halves. Scrap avocado flesh with a spoon. Collect it in an airtight container. Close and freeze it for 4 hours.
- Take mint leaves, sugar and frozen avocados in a mixer jar. Add 1/8 cup of water and grind it. With repeated grinding, you will get a smooth paste.
- Finally, add lemon juice and grind it. Collect this cold smooth paste in an airtight container.
- Keep it in a freezer for 4 hours. The ice cream is ready.
- At time of serving, take it out and scoop out with a warm spoon. Serve it in a bowl.
