Quinoa Sambar Rice
In this post, we are going to see the recipe for Quinoa Sambar Rice. Quinoa Sambar Rice Recipe is very simple to make and it is a one pot recipe.
- 3/4 cup Quinoa
- 1/4 cup Toor Dhal
- 1 cup Vegetables (Brinjal, Carrot, Beans)
- 1 Tomato (small)
- 4 Shallots (chopped)
- 1 Gooseberry Sized Tamarind (soaked)
- 1 tsp Sambar Powder
- 1/2 tsp Chilli Powder
- little Turmeric Powder
- a pinch Hing or Asafoetida (perungayam)
- little Salt
Tempering or Thalippu
- 2 tsp Coconut Oil
- 1/4 tsp Mustard Seeds
- 1/4 tsp Cumin Seeds
- little Curry Leaves
- handful Coriander Leaves (chopped)
- 1 tsp Ghee (optional)
Take all the ingredients given under pressure cooking in a pressure cooker. Add 2 and half cups of water. Pressure cook it for 3 to 4 whistles in medium flame.
After the pressure lowers, open the lid. It will be cooked soft. Keep it for sometime so that the temperature decrease. If you mix now itself, it will become sticky.
Heat coconut oil in a pan. Add mustard seeds and wait till it cracks. Add cumin seeds and curry leaves. This is the tadka or talippu.
Add the tempering or talippu to cooked Quinoa. Add little chopped coriander leaves. Give a gentle mix. Finally, serve with a drizzle of ghee (optional)
Stepwise Recipe for Quinoa Sambar Rice
Take dhal and quinoa. Wash and clean well.
Chop vegetables and extract tamarind paste.
Take dhal, quinoa, vegetables, asafoetida, turmeric powder, sambar powder, tamarind paste, salt and 3 cups of water in a pressure cooker.
Cook in medium flame for 3 to 4 whistles
After the pressure subsides, open the lid. Cool down it from hot to warm.
Now prepare tadka. Heat some coconut oil. Add mustards, cumin and curry leaves. Let them sputter.
Transfer it to cooked quinoa. Gently mix. Sprinkle some chopped coriander leaves. Quinoa Sambar Rice is ready.
