You can try this one pot Quinoa Pulao for lunch or dinner and can be taken as a lunch box recipe. It is weight loss friendly. And it is diabetic friendly too. I have added more carrot and beans. It is cooked to perfection and will definitely come fluffy. You can try this recipe without any doubt. The spices will give a nice flavor and mint will mask the flavor of Quinoa. Pulao will be enriched with a very nice flavor.  The thing I like very much is that it can be made very very quickly.

Ingredients

  • 1 cup Quinoa
  • cup Chopped Vegetables (Carrot and Beans)
  • 1 tsp Ghee
  • 1/4 Onion (Sliced)
  • 2 Green Chillies
  • 1 tsp Ginger Garlic Paste
  • 1 tsp Lemon Juice
  • 1 cup Chopped Coriander and Mint Leaves
  • little Salt

Whole Spices

  • 1 inch Cinnamon Stick (Pattai)
  • 2 Cardamom (Elakkai)
  • 2 Cloves (Grambu)
  • 1 Bay Leaf

Instructions

  1. Heat ghee in a pressure cooker. Add all the whole spices and saute once or twice.
  2. Add sliced onions, green chillies and saute till they become soft. Then, add ginger garlic paste and saute till the raw smell goes off. 
  3. Add chopped vegetables and saute for few minutes. Then, add quinoa and saute for next few minutes. It should slightly get fried in the ghee.
  4. Add 1.5 cups of water and bring it to boil. Its time to add salt, lemon juice and chopped mint and coriander leaves. Close the cooker and pressure cook for 3 to 4 whistles in medium flame.
  5. After the pressure reduces, open the lid. Transfer the Quinoa Pulao to a plate and spread on it. You can serve it now or take it in lunch box.

Recipe Notes

  • 1 Cup Quinoa needed 1.5 Cups of Water.
  • 1:1.5 is the ratio.

I have been using a number of diet style breakfast recipes and thought of sharing them with you. Most of those recipes are quick recipes so that I could prepare in busy schedules. One such recipe is this Instant Wheat Adai Dosai. This Adai Dosai can be made so so quick. The ingredients needed will be mostly available handy at your home. So you could make this Adai Dosai without any difficulty.
You can have this Dosa as a breakfast or evening snack. As we are adding spinach, it is not good to have for dinner. We can use any kind of spinach to use this instant adai dosai. Keerai like Sirukeerai, Araikeerai, Murungaikeerai or Palak can be used. In this recipe, I have used palak. Adding spinach is to make this Adai Dosai more healthy. If you skip spinach, that is also fine. No much difference in taste.
Wheat Adai Dosai

This Dosa can make an amazing diabetic breakfast. The taste will be similar to regular Adai Dosai. It is better to have this Dosa, hot. When it becomes cold much, there is a chance for becoming rough and difficult to chew.

Ingredients

  • 1 and half cup Wheat Flour (Atta)
  • 1 cup Chopped Spinach (Keerai)
  • 1/8 cup Gingelly Oil (for making Dosas)
  • Salt (required)

To crush in a Mixer Jar

  • 2 Shallots
  • 1/4 inch Ginger
  • 1 Green Chilli
  • 1/4 tsp Cumin (Seerakam)
  • a pinch Asafoetida (Kayam)

Instructions

  1. Take 2 shallots, green chilli, ginger, cumin and asafoetida(perungayam) in a mixie. Grind it well.
  2. Chop spinach. Heat some coconut oil in a pan. Add spinach. Saute for few minutes.
  3. Take wheat flour, turmeric powder and salt. Add water and mix well. Mix fastly and continuously. The batter should not have any lumps. Add the crushed masala and spinach. Mix well. Batter is ready. It should be slightly thin.
  4. Heat a griddle. Spread the batter. Make thin dosas. Spread little gingelly oil and wait till it gets cooker. Turn it to the next side. Cook it well. Dosa is ready to serve.

Recipe Notes

Have it hot so that the taste will be better. If it becomes cold, it will become tough and difficult to chew.
