There are some soups that can be taken as breakfast, lunch or dinner. They will be wholesome and filling. They will have almost all elements to make it tasty and a substitute for large meal. For the first time, I had this type of brunch soup in Miami. That was a Mexican slow-cooking soup. The taste was blasting. From then, I am searching for the recipe of a soup similar to that. I got a few recipes like that.

I saw this curry tomato soup with eggs recipe in eatwellwithothers through Yummly. I had a doubt while trying this one. But the taste was awesome. It tastes good with a hard-boiled egg sliced and dropped in it.  Coconut milk enhances the taste. It is better to use thin coconut milk. Use very little oil to get it as much as healthy.

Ingredients

Main ingredients

  • half small potato
  • 1 small carrot
  • 1 large tomato
  • 1/4 onion
  • 1/2 cup thin coconut milk
  • 2 boiled eggs
  • Coriander leaves

For tempering

  • 2 garlic cloves
  • 1 inch ginger
  • 1 bay leaf
  • 1 tsp coconut oil

Masala

  • a pinch of turmeric powder
  • 1/2 tsp madras curry powder

Quick Procedure

  • Chop vegetables and mince ginger and garlic.
  • Heat oil in a pan. Add bay leaf, ginger and garlic. Sauté once it twice. Add onions and sauté till they become soft.
  • Add carrot and potato. Maintain a low flame abs Toast them till potato’s turns golden brown.
  • Add turmeric powder and madras curry powder. Sauté till the raw smell goes off. Then, add tomatoes and sauté.
  • Now it’s time to add coconut milk and required salt. Cover and cook in low flame for 10 to 15 minutes. Soup must be well done and vegetables will be soft now.
  • Transfer it to serving bowl. Sprinkle some chopped coriander leaves and slice egg. Serve it hot.
