Lemon Quinoa Recipe – Indian Style Quinoa Lemon Rice

In this post, we are going to see Lemon Quinoa Recipe. This Lemon Quinoa will be in Indian Style. Lemon Quinoa Recipe is so so simple and just similar to usual way of making Lemon Rice.

I have discussed about the benefits of Quinoa with you in my earlier posts. It is not a millet but just like millets in health benefits. Being rich in protein and less in carbs, you can include Quinoa in your weight loss diet. And ofcourse, diabetic diet too. That means, Lemon Quinoa is a tasty item recommended as Indian Diet Recipes for Breakfast and Lunch.

Lemon Quinoa will be a tasty lunch or breakfast. I prefer to have it as a breakfast and pack to office as a lunchbox item. I followed the same procedure of my regular Lemon Rice and made this Lemon Rice with Quinoa. Not much changes. But please remember, you should add little salt. Because, Quinoa will not absorb more salt as regular Rice items.

Lemon Quinoa Recipe Indian Style

Lemon Quinoa Recipe - Indian Style

In this post, we are going to see Lemon Quinoa Recipe. This Lemon Quinoa will be in Indian Style. Lemon Quinoa Recipe is so so simple and just similar to usual way of making Lemon Rice.

Ingredients

  • 1 Cup Cooked Quinoa
  • half Lemon
  • little Salt
  • little chopped Coriander Leaves

Tempering

  • 2 tsp Gingelly Oil
  • 1/4 tsp Mustard Seeds
  • 1/4 tsp Chana Dal
  • 10 Peanuts
  • 1/4 tsp Grated Ginger
  • 1 Green Chilli
  • little Curry Leaves
  • 1/4 tsp Turmeric Powder
  • a pinch Hing or Perunkayam

Instructions

Preparations

  1. Cook Quinoa perfectly and cool it down by spreading on a plate. 


  2. Squeeze and extract lemon juice from half of lemon. Remove the seeds.

Tempering and Making

  1. Heat gingelly oil in a pan. Add mustard seeds and wait till it sputters well. Add chana dal and peanut and wait till they turn golden brown.


  2. We can now add grated ginger, chillies, curry leaves, turmeric powder and hing(asafoetida). Give saute once or twice so that we get a nice aroma.


  3. Switch off the flame and add Lemon Juice.

  4. Add Quinoa to this, sprinkle some salt and give a gentle mix.

  5. Finally, sprinkle some chopped coriander leaves and serve it.

Cook Quinoa perfectly and cool it down by spreading on a plate. ( I used Pressure Cooker Method to cook it fluffy )

Add Quinoa to this, sprinkle some salt and give a gentle mix.

Finally, sprinkle some chopped coriander leaves and serve it.
