I will tell you where I tasted this soup. I remember mentioning that I would visit Souplantation often. The reason is that I could select more Salads and Soups from there. They have a variety of soups that would taste awesome. This Mexican Quinoa Soup is one among them. On top of the recipe plate itself, they listed the ingredients used to make the soup. And ofcourse, skipping a few secret items.

I referred this recipe from Genius Kitchen. Based on my taste and ingredient availability, I modified the recipe. And we are going to see it in the Mexican Quinoa Soup Recipe below.

The soup is prepared in a simple saute and pressure cooking method. You can have a large bowl of this Mexican Quinoa Soup as a soulful lunch or dinner. It will taste awesome so that you will make and have it again and again.

It is a diabetic friendly recipe. It is also a weight loss friendly recipe. It can be taken as a dinner or lunch for diabetic diet. It is also a better option for weight loss diet. Most of the mexican recipes suit Indian Palettes. The reason might be the combination of spices used. I am having this Soup as a dinner, weekly twice.

Mexican Quinoa and Bean Soup

Mexican Style Quinoa and Black Bean Soup can be easily made at home. It is an easy recipe, quick recipe and healthy too.

Ingredients

Main Ingredients

  • 1/2 cup soaked Black Beans
  • 1/4 cup Quinoa
  • little chopped Coriander Leaves
  • little Olive Oil
  • little Salt

Vegetables

  • 2 or 3 Garlic Cloves crushed
  • 1/4 Onion
  • 1/4 Green Peppers
  • 1/4 Red Pepper
  • 1/4 cup Corn
  • 1/4 Zucchini chopped finely
  • 1 large Tomato chopped

Spice Powders

  • 1/4 tsp Cumin Powder
  • 1/2 tsp Chilli Powder or Paprika Powder

Instructions

  1. Soak Black Bean the previous day itself. Finely chop the vegetables. Wash and clean Quinoa.


  2. Heat some Olive Oil in a pressure cooker. Add Quinoa, Beans, finely chopped Onions, Peppers, Corns, Zucchini and Garlic in it. Saute it for a few minutes. The raw smell should go off.


  3. Add cumin powder and paprika or chilli powder. Give a good mix.


  4. Add chopped tomatoes and mix it once again.


  5. Finally, add 3 cups of water and little salt. Close the lid and pressure cook for 3 to 4 whistles in medium flame.


  6. Open after the pressure lowers and add chopped coriander leaves.


  7. Serve it hot.

Stepwise Recipe to make Mexican Quinoa Soup

Finely chop the vegetables. Wash and clean Quinoa.
Heat some Olive Oil in a pressure cooker. Add Quinoa, Beans, finely chopped Onions, Peppers, Corns, Zucchini and Garlic in it. Saute it for a few minutes. The raw smell should go off.

Finally, add 3 cups of water and little salt. Close the lid and pressure cook for 3 to 4 whistles in medium flame.
