In this post, we are going to see a Mexican Pasta Recipe Vegetarian and Vegan. This is a Mexican Style Pasta made with Whole Wheat Pasta and completely Vegan. This Mexican Pasta Recipe will be very easy to follow.
Soak a handful of Black Beans overnight. Cook them in pressure cooker for 2 to 3 whistles.
Boil water, add whole wheat pasta and cook it covered for 15 to 20 minutes. After it becomes soft and well cooked, transfer it to cold water and then drain it.
Chop all the required vegetables and get them handy.
Heat Olive Oil in a wide bottomed pan. Add onion and garlic. Saute till the raw smell of Garlic goes off.
Add the chopped Peppers and Corn. Saute for very few minutes.
Add Cumin powder, Chilli powder and a pinch of Sugar. Saute to mix it up.
We can now add the pasta, cooked beans and required salt. Raise the flame to high and gently saute the things. Pasta should get coated with the masalas. Thats all.
Now switch off the flame. Sprinkle some chopped coriander leaves and serve it hot.
