Samai Dosai | Little Millet Dosa | Diabetic Friendly

Samai is called little millet. Little millet is rich in calcium and fiber. It help in increasing HDL or good cholesterol. Type 2 diabetic people are advised by doctors to include more samai instead of rice. There are two reasons. One is the low glycemic index. The other is the fiber in samai. Both low glycemic index and more fiber are good for a weight loss diet and a diabetic friendly diet. 

We have a lot of recipes using samai. Samai dosa is one among them. This recipe will yield murugal dosai or crispy dosai. What I personally feel is to have this dosa very hot, otherwise there is a chance of becoming rubbery. Hot murugal dosas will taste good. If you make and have this dosa, you will definitely like this. It goes well with chutneys or sambar. It is a very nice recipe for diabetic diet. It is also a worthy recipe for PCOD and weight loss diets.

Samai Dosai or Little Millet Dosa

Ingredients
  • Samai - 1 cup
  • Idli Rice - 1/2 cup
  • Urid Dhal - 1/4 cup
  • Poha or Aval - 2 Tablespoon
  • Toor Dhal - 2 Tablespoon
  • Fenugreek - 1/4 teaspoon
  • Oil and Salt for preparing dosas

Quick Procedure
  • Soak all the above said ingredients for 4 hours. Take it in a blender and grind it to a smooth batter, adding little water. Don't add too much of water at once. it will make the batter very loose and difficult to ferment.
  • Add little salt and mix well with hand. Let is ferment for 6 hours to 10 hours, depending on the temperature.
  • After fermentation. mix well. Add little water if needed and mix. It should be a regular dosa batter consistency.
  • Heat a pan. Apply and spread the batter. Apply oil on sides. Cover it with a lid. Once the colour turns brown, flip it and cook the other side. Dosa will be done in a very few minutes.
