I have heard most of the doctor's advising Diabetic Patients to take Bitter-gourd juice to control the sugar level.. My aunt is diabetic.. Whenever her result shoot up, she will make this bitter gourd soup and have it twice in a week.
I have practically seen her results coming good after that.. Also Bitter Gourd will destroy the worms in our gut..
This Bitter-gourd Soup/ Pakarkkai Rasam is for the friends who find it hard to take the bitterness.. I This method reduces the bitterness to half.

Ingredients
Quick Procedure
- 1 bitter gourd or pakarkkai
- lemon ball size tamarind
- coconut oil and mustard seeds for thalippu
- scurry leaves and coriander leaves
- salt
- 7 pepper corn
- 1/4 tsp cumin or seerakam
- 1/4 tsp coriander seeds
- a pinch asafoetida
- a pinch of turmeric powder
- 1 garlic
- curry leaves
Quick Procedure
- First let us remove the bitterness. Slice bitter gourd very thin. Add salt and mix well. Let it settle for 10 minutes.
- Squeeze it with hands and remove the juices. Wash it twice.
- Boil this bitter gourd adding tamarind juice. Cook till it becomes soft.
- We are now ready to prepare the rasam.
- Take the ingredients to grind in blender and grind it.
- Heat a pan. Add oil. Add mustard seeds, curry leaves and let it sputter.
- Add the ground masala. Saute once or twice.
- Add cooked bitter gourd along with the boiled tamarind water. Add salt as per taste.
- Cook for 5-10 minutes..Add fresh coriander leaves and serve hot..
